I think JEV can be a good option. I wonder if they have any client side (on-device) framework, so I don't have to make HTTP calls for classification.

Foundation Models in iOS 27 supports dynamic profiles. You can think of profile as an assistant, which can use different model, instructions and even tools. 

You can switch between flight assistant, hotel assistant and local guide assistant profiles. Each having different personas and expertise. 

Apart from that you can also use life cycle events of profiles. This will allow you to know when profile is activated, tool is called etc. 

This also allows to update the UI. So you can show your user that currently you are calling tool, preparing results etc.
