@engineers_feed That gap also makes pressure cooking so effective — by raising pressure above sea level you push the boiling point above 100°C, cutting cooking times significantly. Altitude and pressure cookers are just opposite ends of the same physics.

Water boils at 100° C at sea level because atmospheric pressure keeps the molecules in liquid form until that temperature. At the top of Mount Everest (8,849m), where pressure is about one-third of sea level, water boils at approximately 70° C.
